Spicy Pickled Beans, Another Addiction

This year we are having hot drought with temperatures in over 90 F and no measurable rain for weeks. This has been hard on my root crops (garlic, potatoes, carrots) but has been great for my squash, beans, tomatoes and peppers. 


The upside, lots of beans for one of my favourites, Spicy Pickled Beans.

I started by putting a sprig of dill weed and some fresh dill seed in 4 sterilized 1/2 pint jars. Then I added 1/8 teaspoon of crushed dried chilies to each jar.


Then I trimmed up about 1 pound of beans to the length of my jars 


I mixed together 1 3/4 cups white vinegar, 3/4 cup cider vinegar, two cloves of garlic (peeled), 1 cup water, and 1/4 cup kosher salt. I brought that to a full boil.


I added the brine to the beans to within 1/4 inch of the top of the jar. I put new sealer tops on and bands and tightened them finger tight.


I loaded the jars into my canner with the water just off the boil for 10 minutes.



Let them sit upright until the seals pop down. All these popped in the first hour.





The worst part of these are you have to wait 2 weeks to open and eat them to let the brine get into the beans. Fortunately, I have 

1/2 jar left from last year. The second worst part is friends and family will try and steal jars of these.

Looks real good Disco. I like pickled anything. If it is going to be 2 weeks till they are ready to eat. You can just drop a jar in the mail to me. No need to overnight it.

Sorry, David. I love to cook for people but this is one of those things I guard and keep for myself. Sadly, my wife gave some to friends and now they are asking for more this year. I was going to say no but apparently I'm wrong and will be making more. Sigh.
 
I understand. I have some things that my dogs don3 even get and they eat everything I do.
It does look good.

Thanks, Justin. I made these for a friend and was dubious of pickling beans. Then I tasted them. Crisp, spicy, and oh so tasty. They are a favourite now.

But I still have a couple jars of pickled asparagus from last time I did those! I do have a bucket of pickled going on the counter right now. should try one as I'm sure one has to be close to ready!

Thanks, Case. I have friends who ask me why I grow my own garlic, pickle beans, smoke meats, etc. Then they ask for a jar of this or that. Sigh. Home made remains best. Now, about shipping pickled asparagus...

They look really good, I have done a lot of pickles that turned out good, but haven't done anything else yet. But my wife and I have been wanting to do beans and asparagus this summer and I think this post as helped push me to get going on it. Thanks for your post and pics.

Nice job Disco...and I do like the logo. I 'found' a jar of spicy pickled asparagus in the garage fridge from last year...OMG, good stuff. Maybe make some low ball pickled eggs for those times when you gotta give something away <grin>.....beggars can't be picky, no?
 
Hi Disco,

Looks great!  I'm sure these will be a big hit after they have sat for a bit.  I love the color mix of your beans in your first picture.  I wish the purple beans would keep that color after cooking, but the yellow wax beans and green beans always look pretty together in a jar.

I think the texture and snap of canned pickled beans is way better than that of canned cucumber pickles.  I don't even bother with canned cucumber pickles anymore, I just can dilly beans and leave the cucumber pickles as refrigerator pickles.

From you, Clarissa , I consider this high praise. I used to do pickled carrots, garlic and cucumbers. Now, I only do beans. They are so good.
