Well, not exactly vegan, but they stopped carrying lard. And I refuse to use Crisco, and I'm out of bacon fat.

So anyway, thanks to Foamheart and another member whose name sadly escapes me at the moment. Foamheart made tamales, and the other member made enchiladas. Like I said, I set out to make tamales, but couldn't find what I needed, so decided on Enchiladas. But then I decided to make layered enchiladas, kinda like lasagna. All the stuff's there, they're just not rolled up. So, without further adieu....









Kinda self explanatory. Just layers of tortillas, pulled pork, sauce and cheese. Used canned enchilada sauce with some extra spice added.


And here's the finished product. It was pretty awesome, the smokiness of the pork totally accented the other flavors. Served with guacamole, salsa and sour cream on top.

And on to the trivia contest.


Identify the spherical object in the foreground, and if we ever run into each other at a bar, I'll buy you a beer.

Looks great Md! We do the layered enchiladas all the time. Last batch we used smoked chicken. Super tasty! I have no good guesses on the mystical white orb, so I'll have to day it's a white marble.

Looks so good, add fresh chopped green onions for the top after baking. You'll have one of my favorite dinner plates......... wink
