Hi Everyone,
My husband is a wonderful hunter/fisherman but often does not have time to deal with his catch...leaving it to a clueless me. I am looking to be a little less clueless by the time this summer is over.

Thanks you guys! So I've smoked 3 batches since I posted. I think I'm smoking to hot because the white/cream stuff is coming up...I started At 100 for a couple hours then 200. Any suggestions?
Also I'm wondering about that sort of candied salmon with out the smoked flavor. Can I use the smoker as a cooker without the chips in it or is there a kind of chips that tastes less smokey? I'm using apple
