Hi folks. Just took in the delivery of my smoker today. Starting with the Brinkman and seeing how I get on. I've already read up on the mods for it and expect to drill some air holes in it at the very least. I'm already a keen cook, but I hope that smoking will soon become an off-shoot hobby. Only the Manchester rain can stop me!

If you don't have a covered porch or other shelter that you can smoke under, you might want to devise a fireproof cover of some sort to protect it from the rain. Nothing worse than a perfectly brined butt that you can't smoke because of the rain. As I understand it, it rains a lot in England.

Cheers. It rains even more in Manchester than most parts of England, so I will definitely consider something. As long as my wife enjoys the cooking I'm sure she give me the okay for a bit of DIY!

Welcome from Canada, Jake.

Sorry to be the one to tell you but smoking can be addictive and there is no cure!

Welcome to the site, I look forward to your posts. Remember, we love pictures!

Cheers Disco, I can't wait to get started. I'll definitely put a few pictures up. I've already learnt a lot about mods from other people's posts, so hopefully I can give something back with my cooking knowledge.

I think smoking will be the next big thing over here. I don't know anyone that does it but American and Canadian cooking shows are gaining in popularity all the time. I think the fact it's still quite low key is reflected in prices of smokers. The brinkman I bought cost me more than double what I've seen some North Americans say it cost them!

Har! I hate to be the bearer of bad news. I was in England in April and it seemed to me that things there cost the same in pounds as they do here in Canadian dollars which means they were just about double after exchange. On the other hand, you guys have access to cheese, beef and pork of a quality that I only dream of here in the Canadian Rockies and at a good price. I wish I could have filled my suitcase but Canadian Customs would have had a fit.

I always love it when we have new members from different places on the forums. They all bring a twist from their local experiences. I am sure we will be learning a lot from you.

Cheers guys. Much appreciated. Cured my smoker yesterday so I'm ready to go. Only thing stopping me is a storm named Bertha. Once Bertha buggers off, fingers crossed it stays dry and I'll be giving it my first shot!

Cheers folks. Been delayed by rain so I've not smoked anything yet (I've been looking at buying some sort of shelter) It's looking like it should be okay today and tomorrow though, so I'll see how I get on!
