Smoked wings with Thai hot & sweet peach glaze

Hey folks,

So, my "fire under fire" saga continues

. This time - smoked wings, with sweet, sticky and hot peach & Thai chili glaze. 


The glaze is dead simple:
  • 1/2 cup peach preserves
  • 1 cup Thai sweet chili sauce
  • 2 tbsp lemon juice.
Whisk 'em all together - job's done! Wanna make it hotter? More chili sauce... Sweeter - more peach preserves... Well, you get the point

Smoked on 50-50 peach and almond wood, 250F, 2 hours, glazed half an hour before taking them off, and once again as soon as the wings got off the smoker. 15 min rest under foil, and voila! Even my boys loved them, despite the heat!

P.S. sorry there's no pic of the inside... Didn't last that long

Damn tasty looking wings! Getting a good batch of Thai chiles growing again this year so I'll give this a shot! My thought is to inject with Thai chile fire water then smoke and glaze!
