Did the chicken breast strips wrapped in bacon with a 'diablo' sauce.
Rub had some heat, i mean serious heat, my whole life is still on fire right now. gonna dial back the x-hot cayenne. nekkid strips and breasts were sweat inducing hot, the ones with bacon not nearly so much and super good. finished em off on the grill for :30 to crisp the bacon a bit. yumdizzle for sure. i like the caliente fuerte, but the heavy rubbed nekkid strips were way hot for those who don't dig the heat. just experimenting and learning the smokebox.

ran out of bacon. :(

 
I love the simplicity of this and would be perfect for little hors d'oeuvres for guests. Gonna stay away from that sauce as I am not a big fan of the heat...but great job! :)

next time around, just a simple salt and milder cayenne for the chicken, and run for brined breasts to use for chicken salad and satays.
 
Man, Redeyejedi, you are right on time!! I was just racking my brain to come up with something new to do with some boneless, skinless breasts.

I'm thinking a simple salt/brown sugar brine and finish with some KC Masterpiece cut with apple juice to bring it all together.

I'm kicking myself for not thinking of it. Awesome! :)

Sounds like a winner Michael! I'm going to something similar for a batch. a third cpt morgan habanero fire, a third, JD stubbs sweeter moreso, the last one go towards a citrus tequila lime style.
they cook quick but flavor sticks. and brined, the chicken is quite soft and with the crispinsess of the bacon it's akin to cheese and crackers, lol!
