Beef ribs - HELP

I was at Killen's BBQ in Pearland, TX a while back and had some of the best beef ribs I have ever seen or tasted.  Now I have this urge to try to recreate  them at home on my smoker.  I have attached a pic of some ribs that look very similar.

First of all, what cut of meat do I need to ask for from my butcher?  Are they beef chuck ribs?  I the ones I had we about 8" to 10 " long.

Second, do I do them low and slow, somewhere between 225 - 250?  For how long? 

Any help would be greatly appreciated and I'll certainly report back on the results, with pics if possible.

I just picked up some really nice beef ribs yesterday.

Normally i get racks from Jetro and then do a non spicy rub on them in the morning take out of fridge about 11am and then put on to smoke on trager with Amazen Pallet smoker tube as well until 6 - 7pm or until as cooked as liked.

My wife who is not normally a beef rib eater loves them.

Here is my current smoke of them.

Just been dry rubbed and in fridge.


Out of fridge and just starting


Now 2 hours later 


Currently about 200 - 225 for temp.  I may have to increase heat to 250 for the last hour if the really big ones still have not cooked all the way.

And done


I love cooking both pork and beef but there is just something primal about huge hunking beef ribs ;)

While I like the idea of a big, beef rib they are becoming harder & harder to come by...in my neck of the woods anyway. I had some a few weeks back that looked meaty & delish but were a bit of a disappointment after I was done. Regardless, if you can get some 'meaty' bones from your butcher off a prime rib would be ideal. Short ribs ain't bad if they can be had. IMO, I'd take a spare rib anyday but I can understand your quest for a Texas style rib.....probably easier had in your part of the World....Willie

Same with us. Finding Long Bone Short Ribs or Dino Bone is not easy. Heck even the short ribs are getting shorter.


 
Hey new to forms found some beef short ribs bought 16 lbs. 6.99a pound and had to take out loan plan to cook for wife you are a great bunch of guys so much help. New to smoking have a happy 4

Dam. The 2.49 a lb days appear long gone. I can get steaks at 6.99. Hope their big and meaty.
