Hi all, I have plans for a pork roast this weekend.  I will marinate it for a day or two, then take it out of the marinade, dry it off, apply some glue and then a rub, wrap tightly in plastic wrap and place in the fridge overnight.  I will then smoke it the next day.

Ribs. Baby Backs, are on sale for 2.88 Lb, better picked up a pkg two days ago, to day I put them in my slow cooker with some Dianns BBQ Sauce, 2 bottles, some brown sugar, some garlic powder and some liquid smoke.  They were good.  She will not pick me anymore up, so the other thing I will be smoking, until tomorrow is a complete mystery,

But one thing I can be sure of, the moment I fire up the smoke, the neighbours will come out of the woodwork with something they wanted smoked.
 
Sounds like you are going to have a great Canada day weekend!

Personally I am still wondering what to smoke over the weekend and on Canada day....thinking about prime rib...

doing a pork loin, in the brine today to smoke sunday.

apple juice, cup brown sugar, cup salt, onions, garlic, and bay leaves. always comes out moist. i have put a pan of the brine in the smoker and it catches the drippings and is an awesome juice/sauce on the meat later...

Yep, I put my roast and ribs in the same brining bucket, added Apple juice, Apple Cider vinegar, water, about 15 garlic cloves I crushed and cut up roughly, about 1/4 cup tabasco sauce and some salt.  Tomorrow, that being Saturday, I will take the ribs out, rinse them off, dry them off, then apply some rub and wrap them tightly in plastic wrap and place them in the fridge overnight.  The roast, I will take it out Sunday, rinse then dry off, apply some glue then a rub and smoke day is that day.  I hope to get some batteries for my camera so I can do some pictures to upload here, to show what I am doing.

OK Folks, as Canada Day Weekend comes to close, my smoking for this week is done.  I had a hoot doing it and will do it again.  In fact, as of today, I have some of my homemade Eastern Carolina Pulled Pork Sandwiches, which are outrageously good.
