Hey all,

Had a nice and easy smoke this weekend with a couple of yard birds to make my first smoked club sandwiches. Here was my process (feel free to point out things I could of done better);

Brined two 4 lbs birds for about 18 hours using the following;

- 1 Gallon Water

- 1 Cup Kosher Salt

- 1/2 Cup Sugar

- 8 Sprigs Fresh Thyme

- 8 Sprigs Fresh Rosemary

- 8 Sprigs Fresh Parsley

- 15 Cloves of Garlic

- 1 Onion (Diced)

- 2 tbsp Coarse Black Pepper

- 2 Lemons (Quartered)


Then I butterflied them, spreaded mayonnaise over them and sprinkled on some of Jeff's rub;


Smoked them with part Apple and part Hickory at 235F and spritzed with a mix of (Apple Juice, Water, Whiskey, and Apple Cider Vinegar) every 30 minutes.

Finally pulled them off at an IT of 165F;



Turned out incredibly moist. Got all my other ingredients out to make the Clubs.....and voila!


I can honestly say this was by far the best club sandwiches that I have ever had! Family loved them!

An easy smoke, but very tasty :)

Wow, that looks amazing!  I can't wait for my tomatoes to ripen...this might have to be the first thing on the menu.  Did you use anything unique for a spread on the sandwich?
 
Nice looking Chicken , Knifebld.

I like the use of Mayo . . . may I suggest using Mayo on Corn . Pull back husk , cover liberally with Mayo and replace husk . Cook as usual , peel and enjoy. No Butter needed . . .

Now that's a good looking chicken. BUT, since you asked about improvements and this is just MHO, by the way, I'd lose that green s*** on the plate and substitute a nice mess of French Fries.....LMAO....Willie

Now I did just have a salad for lunch, so this may be hypocritical of me.  But nothing beats a good sandwich with a side of fries.

LMAO...I hear you loud and clear Willie, but had to compromise with the wife cause she is pushing the healthy eating for the next few months as we are booked for Jamaica in September.

What is it with wives and health eating? Whats more healthy than smoked foods? I usually eat mine with a side of beer!

HAHAHA, didn't mean to ruin your smoke for you! I am just always interested in trying new spreads and looking for new recipes.  That sandwich though...great idea for a smoked chicken!
 
Knifebld, that truly looks like a total success.  I gotta do some for the weekend, and just noticed this.  You have certainly set the standard that others need to aspire to.

Looks incredible Knifebld. Well done. I'm mean not well done but... well you know what I mean.

Although we're looking for internal temperature, I'm just curious how long roughly you had them on at the noted temp.
