Hey everyone, RocketDonut here from Houston, TX. My future father in law bought me an Old Country BBQ Pits Pecos Coal Smoker  as a housewarming gift and I have no idea what to do. :)

Hopefully poking around these forums will enlighten my path. My fiancee and I consider ourselves food snobs so I definitely want to back it up with some skills.

I'm planning on seasoning the smoker tonight so hopefully I'll have a better idea of how it all works. Looking forward to visiting here more often!
 
Now that's a nice looking unit. Since it's an offset smoker I would seriously spend some time using the xlnt search bar tool for info on controlling temps and operation tips for it. Every unit has it's one learning curve and quirks to deal with. However, that looks like it will put out some very good chow once you tame it. I would suggest starting with lowly chicken quarters after break-in to see how it goes and get some seasoning splatter on the insides. And have a back up meal planned, just in case ......HTH, Willie
 
What to do with it?  Build a fire in it.  Put meat in it.  Cook well.  Enjoy fine meal.  Job done.
