Tomorrow I start my quest at smoking. I'm very nervous, more worried about messing up some pricey ribs though. I will try to attach pictures of my smoker that my 2 year old and myself put together last night. Ribs is up to bat first, what is the best wood for this and do I also have to use charcoal? I could use any tips or guidance with my ribs from rubs, wrapping, temp of smoker, temp of meat etc...? Thank you in advance! Going to be spending a long time on this forum!
 
Maintaining tenps in that cooker is the first thing to concentrate on. And charcoal instead of just wood shouldl be easier for you. Depending on the type of ribs you are smoking the classic 3 2 1 or 2 2 1 method is pretty good as a general guide. Wood type? Just about anything except maybe mesquite for a newbie. Just don't make the mistake of a lot of first timers and lay thick clouds of heavy smoke on the meat.....especially ribs. Try the search function here and you'll have about all the info you can handle. Best of luck and happy smokin'.
 
Thanks! Good info! I got the St Louis ribs. How about injecting them with apple juice?

I would not worry bout injecting them.... If your worried bout them drying out during the smoke... Rub them down with some yellow mustard, EVOO or peanut oil before applying your rub.... It'll create a bit of a barrier for ya & I've always had good luck with ribs doing that !
