Hey all I finally got my new WSM 22.5 and have done a few cooks on it so far. The thing is incredible! My only question is for those of you who use them in competitions what if any mods do you suggest. I live in Florida so the coldest it should see is still well above freezing.

Only mod you need (if yours doesn't have it) is either a slot in the upper lip rest or eyelets, for the probe therms. But most newer ones have a grommit built into them already. If you look below my signature there is a link to the eyelet mod I made to mine.

Only other thing I do is I have a 6 ft. x 8 ft. welding blanket that I use as a combo wind break/insulation on windy cold days. I wrap it around my smoker, then use some big spring clamps (big metal clothes pins) to secure it. This lets me smoke with very little fuel consumption in cold windy weather. Wind is the actual enemy, even more so than the cold.

Here is what it looks like all wrapped up. Just make sure you don't block the exhaust vent, and you can pull the top two or so clips and peal it down to pull the lid for checking the meat. Or pull the bottom clip or two to add wood chunks to the charcoal. Best of all when you don't want to use it, it folds up small and fits in the garage.

I'm heading to Home Depot here in a few and grabbing some hex heads, I run a furniture store so I already have the threaded pipe that we use for lamps.

Just make sure you tape and center punch the drill spot so you don't chip the enamel coating.... and some sort of oil to aid the drill bit helps a lot as well.

The only other mod I did was to add a piece of expanded metal and handles to the rack for the coals. If you don't use lump charcoal it may not be needed. There are other pictures on this forum as well.

This essentially makes the grate, ring, expanded metal one piece. I just shake it out, dump the ash and refill. Someone has also made a coal chute that fits in the door to add coal, I may look into that some day.

I just use the door that came with it as my coal chute.  When charcoal needs to be added just open the door about 45-60 degrees and pour hot or cold charcoal on the door.  It goes right into the fire.  Then use long tongs to balance the new load.

When you do this, the coals don't get stuck between the metal ring and the side of the smoker? I am gonna have to try this as it is one of my only complaints on the WSM.

I do this (the few times I have to add charcoal that is) and usually only have 2 or 3 pieces fall between the ring and the side of the smoker, I just fish them out with a pair of tongs. It was SmokinAl who made a chute out of a piece of chimney pipe with a handle... you might be able to still find the post, it was several years back.

I don't worry about it if it all doesn't go in the fire.  It's in the smoker and whether hot or cold it all gets burned up eventually.
