Finally had some free time this weekend and my niece had bought me a brisket for doing some repairs for her. Had planned on starting early this morning, but had family in from Thunder Bay til late so I slept in a bit. Forgot to take prep pics rushing around but managed a few.

On the BSK

Halfway through at 167*..decided to keep going, no foil, no spritz.

First toothpick test..191*. Going to give it a little bit longer.

194* passed the pick test. Laid a sheet of foil across to rest and realized I was a little ahead of schedule. So did a little carving work between the point and flat. Wrapped the flat in some foil and towels and turned my attention to the point.

Just put them back on the smoker, and we'll get 'em in a couple hours..more to follow
 
Wow...that looks great!  I'd tear those burnt ends up!!

Everything about your brisket looks great!  I wouldn't turn down any of it!!!

Your post does remind me that it's been a long time since I've done brisket.  We've been on a pork kick for quite a while!

Thanks BArnold. Definitely is nice to make the time for the brisket, although I would never say no to pork.

Thanks atomicsmoke. Would have said yes, but went in the fridge this morning and all that's left are 2 slices of brisket. I think my teenage boys are quietly  trying to tell me to do another one..either that or I have finally driven the neighbours nuts and they are raiding the fridge now. May have to throw another one on Saturday.

Thank-you dirtsailor. For a first attempt I was pleased. Unfortunately, we had some wind and rain roll in during the ends. Forgot to set the alarm on my mav and temp jumped to 330 while I was prepping the rest of dinner. Boys didn't seem to mind, kept saying they tasted like candy..lol
Now that's what I'm talking about!!! Nice work.
