Enchilada de pollo ahumado Casserole

The big box grocer had boneless skinless thighs on sale. I usually like to use bone in skin on but these were priced right. I've been craving chicken enchilada casserole so I thought let's take it up a few notches.

I decided why not inject the thighs with enchilada sauce and them let them marinate in the sauce all day! Oh yeah!

I like to add corn and olives to my casserole so I boiled some corn. I added chipotle, salt, pepper and garlic to the water.

I smoked the thighs low and slow in the mini, 250. Cherry and pecan

Simmered the sauce with corn and olives smoked hatch chiles.

Then layer it in the casserole dish. Sauce, tortilla, sauce, chicken, cheese, tortilla, repeat!

Put into a 350 degree oven for 25-30 minutes our until heated through and bubbly!

In the oven as we speak so more in a bit!


Smoke away!!!

Makin me hungry Case!

If you gotta use a store bought sauce, that one is my favorite brand.

Also like the verde sauces which can be pricey to make from scratch.

Oh?  Did I mention convenient when I am spending hours on another project?

Purists need not apply!

 but its own thing at the same time. Mexican food down here is pretty dumbed down.

Is this old school mexican or something thats evolved over time? Looks the goods either way.

Amazing the culinary concoctions from different cultures that have a common thread?

Here in Mexifornia country?  I think of the enchilada casserole as the lazy Gringo's enchilada dish?

Still a very tasty dish when Case does it!

Mick I'm not sure if it's old time or not. I know it's been around at least 35 or so years cause my mom used to make it. She always used ground beef. I wanted chicken and it was so good. The injected smoked thighs were perfect! So good and simple.

Thank you! Definitely a keeper dish. I prepped it all yesterday knowing I wanted something I could just pop in the oven for tonight!

I can hardly wait.

Thanks Disco! It's a tasty comfort dish! I usually make my own sauce too, but all the yard work this time of year made me lazy!
 
As usually, always late. Looks great Case! I have had veggie or Corn and black bean enchiladas. But never have I tried smoked chicken and corn. I bet its delicious, more so because its not canned corn. Oh and a FYI in Texas they call 'em stacked enchiladas.

Doesn't matter what the call 'em as long as ya call me when they are done. Those sure do look good man.

Thanks Kevin! Yes very tasty! My all time favorite though is shredded beef, which would be great smoked using a chuck or seven bone roast! Oh boy I see another meal in the making!

Stacked enchiladas, or Enchiladas apilados!
