Hello all I've been lurking here for awhile and learned so much thanks. I'm opening a restaurant and been working on a good bacon dry cure. I've got the flavor where I like it but it comes out more ham consistency which I like but people like crIspy on burgers. Any tips?

Crispy wouldn't have anything to do with the curing method.

Whether it's crispy or not would depend on how you fry, bake, or broil it.

For crispy without burning it, I would try Baking it.

Thanks man. I fried this batch in cast iron but have also baked.
