Hello all. Due to extenuating circumstances last week, I was in need of more cooking space. Unfortunately, with smoking not being as big around my area, my selections for cookers was limited with the time frame I had. As a result, I ended up purchasing an Original Bradley 4 rack that luckily enough happened to be sale. After doing the seasoning and doing 2 cooks in it, I am realizing that I am going to have quite the learning curve. So I was hoping any past and present OBS owners, might be able to answer a few questions for me.

1) even after pre-heating to 280*, I put a 5# eye of round in and the temp dropped to 189*. Four hours later the cooker temp was only at 201*. I had the biscuit heater on and had the dial temp almost at max ( halfway through the 6th bar). I also closed the exhaust vent halfway. Was there something else i should have been doing?

2) i don't really care for the fact that the biscuits are only 1/2 - 3/4 done before they start giving off a burning smell. Also noticed that because the because fall into the water dish upside down, this smell seems to stick around until they are able to soak up enough water. So is it possible to use the AMNPS or tube in this unit instead of the biscuits ? If so, do I still need the water bowl in there?

Did you verify the smoker temp with a second thermometer that was calibrated..... factory therms can be faulty....

If you do not use the biscuits, there should be no need for the "biscuit drowning" water pan....

Morning Dave. I used my mavericks for the temp monitoring.. i didnt even look to see what the factory thermo was reading. Spoiled already with the remotes, lol..

Wasnt sure if anyone had tried the pellet burner in this unit. would much rather use that. I think I saw a place up here that sells them. Gonna have to make a lunchtime detour.

Thanks for the help Dave. Just after your last email, got a service call just around the corner from the bbq place. Stopped in on my way to my next call and picked up a 5x8 tray and some bbqr's delight pellets..looking forward to trying it out when I get home.
