hey all. I purchased  a char-griller pellet smoker and am gonna try some baby back ribs and chicken thighs. any pointers or recipes I could try for my first pellet smoke.
 
Congrats on the new smoker!  Be sure to show it off with some qview!  I'm not sure I've seen one of the char griller pellet pits...I'd be interested to see it.

five hundred dollars.   580 sq inch grilling area.  iam planning on making a top grill rack on it but its roomy now.  will hold  five butts.
 
I too just purchased a Char Griller Pellet Smoker and love it!  The cooking area is much larger than I anticipated and I achieved a perfect pink smoke ring on the two racks of baby backs I smoked last weekend.  I'd love to see how you modify to a top rack Ole SMokey 38, please share once you get it completed!


 
For a second grate grab a gate from the local home store that fits your unit, then grab 4 6-8" stainless carraige bolts, 8 washers and 8 nuts. Use the bolts, rounded head down, for the legs and attach to the grate with the washers and nuts on each side of the grate. Simple and adds a nice extra level for cooking.
 
I've tried using my AMAZI-N smoker box but it doesn't seem to be getting enough oxygen and therefor going out. Any suggestions on placement?
 
Pick up a nice 3 or 4 pound chuck roast and give it a go. Smoke it on a rack over a pan to catch anything that drips off, at 200 or so until it gets to about 170, then put it in the pan with some liquid/bout 1/4 cup maybe a bit more, Broth, beer, water, Wine, and foil the pan and go until the internal is 205 or so. Let rest for a few minutes covered then dig in you can shred or just eat chunks.

The steak looks fantastic. so does everything else, try some burgers also.

The maze smokers don't perform very well in pellet rigs...I experienced the same thing when I first got my pellet pit, and it was suggested to me that I try one of Todd's tube smokers instead...I did, and it works great!
