First brisket

I'm new to smoking, but my wife and I decided what better way to learn than to have a party. Today I'll be doing brisket, pork and ribs for 25. I was so excited I woke up a half hour before the alarm and got started early. Can't wait to see how it all turns out.
 
Good Luck! Brisket is arguably the hardest meat to perfect... I admire your courage. My advice? Watch your temps constantly...
 
I may not get it perfect the first time, but looking forward to trying. Been watching my temperatures and plan to wrap it when it gets to 170. Both the brisket and the pork have hit 145 and stalled. It sounds like this is normal, the advice I've found here is great.

Looking forward to eating it tonight.

Ya know your already an addict when ya can't sleep cause ya wanna fire up the smoker & get the meat on ! One way to learn is just jump in & sound like ya just dove in head first ! Post some pics when ya can or we'll have to send this guy after ya ! :police2: LOL

I was a little worried I took on more than I should have. Cooking for 25 the second time using my smoker, but it turned out great. I followed the directions I found here for brisket, pulled pork, ribs salmon and beans which all turned out good. I'm hooked and can't wait to try again see how it can improve.
