Does anyone have a good substitute for ketchup for sauce recipes? I was thinking tomato sauce and paste. My issue is, the sauce finishes with a "ketchupy" taste that I don't care for. I could use less of it, but would still need a filler to make up for it.   Any direction would be appreciated.
 
Ketchup and tomato based BBQ sauces share many of the same ingredients but in different ratios. If you start with tomato sauce and tomato paste you are essentially making ketchup and adding other things to make a BBQ sauce. I find it easier to cut that step out and use a good quality ketchup, one made with cane sugar not corn syrup, and add my other ingredients to it.

What are you adding to the ketchup to make your sauce? And how much?
 
Nearly the same as Jeff's recipe, but with 1/4 cup of beer and 1/3 stick of butter. Just had a little ketchup aftertaste I didn't care for. I think it may be the vinegar aftertaste (I used Heinz) I didn't care for. After adding the beer/butter, it dulled it a little. 
 
I'll get reprimanded for this , but some liquid smoke makes a ketchup sauce lots better.

Here's a BBQ sauce my Family swears by  :

64oz. (cheap ketchup)

2cups firmly packed Brown Sugar

1 cup melted Butter

2 tbls. Worchestershire Sauce

1/4 fresh Lemon juice

1/4 cup of liquid smoke(Hickory ,Pecan, Mesquite, (or any other bottled smoke liquid).

Mix together, heat to melt and use at room temp.

If the strong Vinegar flavor bothers you , add 1tbls Balsamic Vinegar (it's milder and has a marvelous flavor.)

Enjoy and as always .. .

Hey Stan. I like your Recipe. Thanks for posting. I put Smoke Powder or Liquid Smoke in my " Go To " BBQ Sauce because it is used on non-smoked foods as well, Hot Dogs, Fries, Burgers, Etc. It is a cheap and dirty way to get smoke flavor on anything.

This is made with Ketchup but doesn't taste like it at all. If you want to use even less, reduce Ketchup to 1Cup, increase Tomato Paste to 3T and add 3/4 C Water. It will not taste like Tomato Sauce...JJ

KC Bubba Q Juice

2C Ketchup

1/2C Brown Mustard (Gulden's) 

1/4C Apple Cider Vinegar

1/2C Molasses

2C Dark Brn Sugar

1T Tomato Paste

1T Your Rub

1-2tsp Liquid Smoke

1tsp Worcestershire Sauce

Combine all and warm over low heat just until it starts to bubble. Simmer about 5 minutes, stirring very frequently, to combine flavors and to thicken slightly.

Use or pour into a sterile jar and refrigerate for up to 4 weeks.

Makes 3 1/2 Cups.
