In about 5 hours I'll be putting my first butt in my new Masterbuilt digital smoker. I'm a little nervous, but I've heard the butt is pretty forgiving. I've dry rubbed my 7-pounder and have it resting in the fridge over night. Will be using Apple wood. Any suggestions?

Will post pics along the way....

Don't be in a hurry.  Hopefully, you have an accurate thermometer to measure your chamber temps.  Be prepared for something called "the stall", where your butt will rise in temp at a fairly steady rate and then WHAM, the temp will stop rising for quite some time.   When you get to the stall, you can do one of three things.  1) just wait it out.  Temp will start going back up at some point.  2) Wrap the butt in aluminum foil and put back into the smoker.   This will help speed through the stall.   3) crank your temp up if you can.  This will also help speed through the stall.

Last step is to leave the butt in the smoker until it decides that it is done. Presuming that you want to have pulled pork, the internal temp might be anywhere from 105 - 205 or even a little higher.   The way to tell if the butt is ready is that the bone should almost slide out and a temp probe will slide into the butt with almost no resistance.  When butt reaches this point, remove from smoker, wrap in foil (if not already wrapped) and let it rest before pulling.

Just pulled my butt out and am letting it rest. It looks fabulous. Not bad for a first timer.
Pulled turned out great. Nice texture and moist throughout.
That looks awesome!  Nicely done!
