For my first smoke I did burnt ends from som country style ribs.
First thing I noticed is the temp stayed more constant than my old smoking pro.
I didn't like filling the chip tray every 30 min or so so I did some tinkering, I read about putting in some charcoal chunks so I busted up some briquettes into 3/4 inch pieces. Then instead of chips I used wood chunks that I cut to a 1/2 to 3/4 inches thick. I mixed these 3 or 4 of these with 3 or 4 of the charcoal chunks. I got an hr to an hr and 10 minutes a shot. I got a stronger smoke flavor than I usually do, but I may have used more hickory than apple(I had it all mixed together). It took longer to get to the super tender stage but it had an awesome flavor. I think I'm going to like this electrics smoke!

The best thing I ever bought for my MES was an AMNPS - now I get 12 hours of smoke without having to tend to it & I can cold smoke with it too

Another bonus I put all the racks, drip pan ect in the dishwasher and they are now spotless

This is what I would get for your MES 30. I think it was made with that smoker in mind as it fits perfectly on the left side of the heat chamber/chip tray.

I would not think you would want to try pellets in the chip tray of the MES but that is only opinion.

Just picked one up for my new MES 30, and was wondering where to put it. Is this next to the existing chip tray? Do you leave the original chip tray and loader in place?
 
Consensus seems to be to put it on the two rods that extend from your heat chamber/chip tray to the left side of the box. I have always left my chip tray in but I do pull it out about 1 inch and I leave the chip loader in but I sometimes pull it out an inch or two especially when first starting the pellets and leave it for at least the first few minutes.

There are many opinions about how to get the best success with lighting and keeping the pellets lite. I use a propane torch, make sure you get them really cherry red and flaming, let it flame a few minutes, blow the flame out and blow on the embers to make sure they are cherry red, sometimes it will start burning again which is ok, just blow it out. You don't want to put it in the MES while it is still a flame, or if it is make sure you blow it out.

Some people microwave the pellets for 1 minute or so, usually put mine in the MES while it is pre-heating and then take them out and light them.

I have not had much trouble keeping them burning but I live in Phoenix, AZ, through the winter our humidity will usually run in the single digits.

When I was testing AMNS units for Todd, He was working on his new toy---The AMNPS (about 4 years ago), I had told him that the 6 X 6 AMNS didn't fit to the left of the chip burner assembly, on the bars, in my MES 30. So he had me measure the distance from my chip burner assembly to the left wall, and he allowed a small amount of play, in case some were a little different. The AMNPS should fit there in an MES 30, with about 1/8" to 3/8" of play.
