I have a smoke hollow grill charcoal 1800CGS. So smoking with a off set side box. Any other things I should add? Thanks for the help

Not too familiar with your smoker, I would if I were you go to the forums & in the charcoal or propane areas, as this if not mistaken is a combo smoker .... Ask in a few different threads as to people's experience with these smokers ! I know there are some Smoke Hollow users on here that I'm sure would be happy to help ya ! Also, there is some info if ya put in your smoker info into the search bar at the top ! Hope any of this helps ! I have a WSM 18.5 & I know on that smoker the water pan is used for temp. control.... Again, hope any of this helps !

IMHO, yes.... I have a pellet grill as well that uses just that, wood pellets of different kinds... Hickory, pecan, apple, etc.... It uses NO water pan & it turns out some very, very juicy Q !
 
Don't know what IMHO means but thank you. Only smoking I've ever got to do was on my old big charcoal grill by having to put everything on one side. Excited to get this going.
