Smoked Chicken Wings with Q-View

I have been relying on this website and the great forums within  ever since getting into smoking and finally got around to my first post.  Chicken wings were on sale at the local grocery store and figured I would do them in my MES 30

Made up a rub I found online that I have used for Ribs and also use for Pulled Pork
[h3]Ingredients:[/h3]
  • 1/2 cup brown sugar
  • 1/4 cup paprika
  • 1 tablespoon black pepper
  • 1 tablespoon salt
  • 1 tablespoon chili powder
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon cayenne
Gave it just a light coating as I will be saucing at the end... also want to enjoy that great smoky flavour!


As the smoker preheated I got my AMNPS going... a mix of Hickory and Apple Pellets.. Just needed one Row as only takes an hour and a half in the smoker

Cant smoke without your Maverick ET-732

I found that I cant keep my AMNPS going if I put the Burning row on the outside but have no problems if its set-up as per below

Getting there - Smoked around  250°-275°  for 1 1/2 hours

Onto the BBQ to get sauced 


Used a mix of Carolina style bbq sauce/ Franks Buffalo / Franks Hot Sauce


After a few minutes on the grill good to go!

A lot of work but the end product was definately worth it.

I think you're a freaking genius!!!

Not because you made tasty looking wings but because you solved my AMNPS dilemma.  Man, I've been using the AMNPS (most unsuccessful) for years.  Some times it would work for me, other times it wouldn't.  It would start and then burn out.  Heck, I ain't never had that TBS that folks brag about.  But when it did work, it was great.  Don't get me wrong, I've been smoking for over 10 years.  But the AMNPS was kicking my butt.

I tried your suggestion and have mercy it worked.  It worked better than I've ever seen.  Following Todd's suggestion of getting it started, I then followed your suggestion of inserting the AMNPS with the burning pellets on the inside.  Right now, that baby is burning like I ain't ever seen it before.  My neighbors dog is barking like crazy because the entire area smells of Pitmaster's choice--honey hush!

Goes to show, an old dog don't know all the tricks and can still learn. Now, if ya'll squint yo eyes good, you'll see my sweet smoke coming from my Masterbuilt.  Honey hush, I'm gonna smoke me a pork butt this weekend.

I am glad my suggestion worked for keeping your AMNPS lit ...Love that TBS you got going on there.  Nothing more frustrating than having to attend to your smoker to ensure its producing smoke.  Thinking of pork butts, 

I did one up yesterday for some Pulled Pork Sandwiches and Will be making a homeade Pulled Pork Poutine..... Let the smoking season Begin! No Q-View this time...

I could see from the beginning you had those wangs going in the right direction.

It was when you said, "Franks" that you hooked me and reeled me in!

Looks great, question... before you threw them on the grill after smoking them for 1.5-2 hours were they really rubbery?? I made my first attempt of hot wings on my WSM today, and cooked for 2 hours at 250 and when they were done they were really rubbery...Im reading around and best bet is to throw them on grill for a few minutes afterward to make them not rubbery?
