Hickory Smoked, Reverse Seared Steak, Pulled Chuck, Soda Bread & stuff

Well it's Tuesday & as everyone knows Tuesdays are a great day to smoke

  So I decided to have a steak for lunch & smoke some more stuff for later.


I started with this strip


& gave it some SPOG.


After that it went in the smoker to get doused with hickory smoke.

Smoker temp 143                                              AMNPS running hickory pellets

Now to figure out what else to smoke & what else to make.

I let the steak smoke for 1 1/2 hours then got some Stubbs started & moved it from the smoker to the grill. 


These pictures somehow got blurry - I'm gonna blame that on me...



& now it's ready for a short rest before cutting into it...

Ok I decided on a chuck as one of the extra things to smoke.


I started with this chuck.


Gave it some seasoning.


Gonna make some au jus with it so here are the veggies for that...


It's been windy here all morning & when I went out to put the stuff in the smoker the rain hit. Here is a view looking off my deck at the upper pond - you can see a sheet of rain coming across.


Check out the surface of the water - it's raining like a tall cow p*ssing on a flat rock - good time to be smoking

Ok the chuck is coming along nicely & has been moved into a pan along with some flavoring juice that I mixed up to keep it moist.


Chuck moved in the pan with the juice - the au jus is really starting to shape up too

I decided to make some fresh bread to go along with the meal - here are the dry ingredients & the buttermilk ready to be combined.

I'm still not sure what else I'm going to make - dessert is up in the air too

myself for not making Au Jus the other day when I smoked the tri-tip. There's just enough tri tip left over for french dip sandwees tonight. Going to have to use store bought!

  Yeah that au jus comes in handy for all kinds of stuff - what I have left I usually freeze in an ice cube tray then vac seal it for later. Sorry you have to use store bought...

Yup the weather is strange here today. The temp dropped 30* since this morning & now I'm getting snow flurries in between rain showers! Good time to be smoking...

Yeah we have some weather moving in over the hills. Was 78, yesterday, supposed to snow tonight! Yeah!
Same here. It was in the 70's the last few days - I've been having to open my bedroom window & turn the fan on to be able to sleep (didn't want to break down & switch on the AC yet) but it doesn't look like I'll have to worry about that tonight

I'm just over the Mason-Dixon line from you and it's supposed to be 25° tonight, I can't believe it.

The steak and chucky look delicious
 
I went with some sweet corn to help clear out a little room for this year & while the oven was hot I threw in some corn bread - don't have pics of the mixing since the camera was charging so just have to make do with the finished product... The chuck is resting & waiting for everything else to finish up.


Just out of the smoker & smelling incredible

Mmmmmm ! Just came in from finishing the garden fence, not as warm today but still 65, but the wind is chilly!

Snow tomorrow!

Now left over tri tip French dip! Water cannon some if that Au Jus this way so I don't have to use this!
 
All looks really tasty for sure SB, very fine meal..... Around my house now, have a hard time not doing steaks RS, once ya try it... the RS is really hard to beat !! Great smoke ! :biggrin:
 
Sorry about not being able to finish this up yesterday - something came up & I had to leave right away.

Here is how the soda bread turned out.


First cut.


Turned out very good.


This is a nice hearty bread that is great for soaking up broth & gravy, enjoying with a little butter or just eating by itself.


Garden corn heating up.


& here is the chuck. It was especially moist - I've never had one come out dry but this one was just oozing moisture from every surface... I use a bit of au jus when I reheat the leftover chuck but I honestly don't think I will need a single drop of it for this - that's how moist it is

I threw together a quick sammy on a homemade roll


& made a quick plate.


It was before I pulled the chuck that I found out I had to leave so I didn't get a chance to make a dessert. This was still some good eating even without that though...

I would have tried to launch you some if I had seen this Case - I had to go away last night with no warning. How did yours turn out?
