Hi there. I just discovered this forum recently while looking for information on making corned beef and pastrami. Decided to buy a Big Chief smoker yesterday. I figured it would be a simple but decent smoker to learn the basics on.

I'm an apprentice lineman up here and usually quite busy, so finding time to pursue interesting hobbies like this can sometimes be difficult! There's tons of big game up in this area, hopefully I'll be sharing some Moose or Elk recipes with you folks eventually. That pup in my avatar is my Silver Lab, Hank Williams. Cheers!

Nice Pup I have 3 labs Blk/Yel/Choc My wife was not happy with their names  Rum/Tequilla/Whiskey.I wish I could get some moose and elk down here but it is a trade off I dont get any snow LOL

This is a great place to come to learn to smoke. If you want to try a project, just enter it in the search bar at the top and you'll find several methods. Also, if you post pictures while you're doing a smoke, people can comment while you are doing it.

By the way, there is a Canadian Smoker forum you might want to sign up for.
