Great Baked Zucchini

Here is a simple dish my wife and I eat all summer. I go out to the garden pick a Zucchini or two (depending on size)  Preheat oven to 350º  Wash and slice zucchini length wise. rub with olive oil sprinkle whatever seasoning you like (I like Tony's) then cover with Parmesan Cheese. Place on a a cooking sheet or pan and bake about 30 to 35 min. or until the cheese turns golden brown. That's lunch dinner or a great side dish. We let our zucchini's get pretty big so one half usually makes a pretty good lunch. You can do the same with yellow squash if you like. both real good.

Gary sounds good we do almost the same but stick on the grill and use a fresh farm cheese that we make here.My wife also makes alot of Zucchini Bread, well after I bought a oven and taught her how to use it.

One thing about these , Quick and easy, and makes a tasty dish. We have also done tomatoes like that.  Just cut the top off sprinkle with seasoning and Parmesan bake till golden brown.

As summer approaches and we start picking veggies from the garden we cook more and more of them on the grill. People who don't grill vegetable's just don't know what they are missing. 

Had some rain and high wing last night, dodged the hail, the next few days are supposed to be spectacular according to our weatherman hope so.
