Hi all, this is my first post. I am going to smoke a pork shoulder today its a 6 pounder bone in its already been injected, and rubbed sitting overnight. I attempted to make a beef brisket last weekend and it was a disaster I left it in overnight while I was asleep. Was so dry. This is my first pork smoke. Ive noticed my top shelf tends to cook faster but it also tends to get the meat noticably dryer than the bottom shelf thats right above the water pan. However the bottom shelf seems to cook much slower. So, Which shelf should i use? Any advice will help, I will post pictures when its done, what am I doing wrong?

BTW, I am smoking in a 30" Masterbuilt Electric Smoker Digital No window. I live in Seattle, WA I am 22 years old male now you know a bit about me. My smoking exp is little.

Do you have a thermometer to measure the IT of your pork butt & also the temp of your smoker? My MES 30 runs roughly 25 degrees hotter than I set it. If you have a thermometer to use in the smoker put it close to your butt on the same cooking rack - I use a Maverick ET-732. I also don't use any water in my smoker.

I pull my butts when they get to an IT of around 200 degrees then wrap in foil & a few towels. Then I put it in a cooler to rest for up to 5 - 6 hours if necessary but I go for at least 45 minutes to an hour - this rest lets the juices redistribute for you.

Here is a butt I put in last night & smoked through the night finishing this morning. It will show you what your MES can do with a butt

Looking forward to it.

Hey, if you get a min. would you please update your profile on the upper taskbar, "My Profile", that way everyone will know where you sleep at night and you don't have to explain with every thread.

Also since I see you are new to the forums, take some time and drop in the "Roll Call" forum and announce yourself so you can get the official welcome and learn the secret handshake. Its painless, well mostly anyway.
