Corned Beef/Pastrami Foamheart Second attempt!

OK, check it out! Pastrami & Smoked Provolone w/ Kraut on a toasted homemade honey rye, dressed with creole mustard that has a hint of horseradish!!


Not too shabby If I say so myself.


Steamed it to >200 degrees, its still not very tender, but it is edible. The fresh bread and smoked provolone though take up the slack.

I now know more than I did when I started and I'll be ready for the next time as soon as I can put compress all this experience into knowledge.

BTW That sandwich was definitely work the hassle and the wait!

Looks great!! I'm salivating and I'm all out of pastrami... Overnight me a sandwich just like that. Guess ill have to smoke one of the 6 I have in the freezer hahaha I have a little meat hoarding issue...

And the bread....... It would have been real a "homemade Sandwich", if I would have made the kraut!

  Thanks Man, Ya know if I had a helper like yours I would have had it made long ago...... I get to taking it too seriously. Then I have to reign in and walk again. But I didn't even realize I was running when I was. That is why kids are fun in the kitchen!
 
That is a good looking, fine tasting, and effort satisfying sandwich. I was the same way with CB and ham last year. 1" closer each time. Have I ever mentioned summer sausage?

The little one has definitely taught me to chill a little... I too tend to take cooking and my other hobbies very seriously. But put it all in perspective and you enjoy it a lot more! And so far I have not spilled into family or friends fridge and freezers... But... We are a family of three and running two full sized fridges, a beer fridge in the bar in my basement and a small freezer. I have a problem...

No you don't. I have a family of three with 3 full sized fridges and 4 freezers. Lol. All full.

  Not only do I have 2 fridges upstairs - I have an 18 cf upright freezer upstairs, a 21 cf chest freezer in my basement, a 15 or 16 cf chest freezer in my shop by my beer fridge & just got a 17 cf upright from a friend

   Somehow I still feel quite normal though... I do agree with Foam on the subject though & I do have friends with room in their freezers if I need it

How can I be sitting here eating a freshly smoked pork tenderloin with roasted apple and onion sauce when suddenly my mouth starts watering looking at that sandwich?!?  I want some!  Thanks for posting that picture FoamHeart. 
 
LOL.... Ok, I have three huge freezers, two reefers in the house, and in bar in the garage I have a meat project reefer and a beer reefer. What makes you think you are hoarders! You are just normal, till you have to start sending out visiting meat to friends and neighbors...LOL AND don't forget all the canned fresh foods! Damn I miss those fresh eggs too!  What makes you think that you are not normal?

As to the eta of another pastrami attempt, maybe awhile. Pastrami doesn't sell as well in the south as brisket, but no doubt will be another attempt this year.  

Next project will most likely be Andouille and /or Cajun sausage. I seem to be having requests coming in and mine from the last smoke is petering out. Since I have only done 5lb batches they don't last long. Its nice that way you can make more sooner and tweak it some more.

But who knows. (whispers/ I think I am about out of bacon too!)

Thank you sir, after that sandwich this afternoon, I pretty much skipped supper. That's a big heavy sandwich and it sorta lays there a while. LOL

I'd love to share with ya. But you'll get no sympathy from me while chowing down on a tenderloin, and with a roasted apple? Oh my!
