The three hour turkey!

Had a 12 pound Butterball that we got free around Christmas. Didn't brine or inject since it already was juiced up by Butterball.

Knowing that this bird would just fit in the mini I did a pseudo spatch. Removed the backbone but didn't crack the breast. Flattened out the bird would be to big for the mini.

Seasoned with salt, pepper, garlic, and chipotle.

Fired the mini with Kingsford blue, cherry and pecan wood. Ran the smoker at 350* took the bird to an it of 165 in the breast and thigh. Removed foiled and let rest for 45 minutes before serving.

A pseudo spatch...what a great idea!! Gonna have to steal that one! :)

Thanks Suie! It was the only way I could get that bird to fit in the mini!!! And it worked just like a fully spatched bird! Fantastic!

Looks excellent and surely the right temps. Only thing I can nag about is...breastes down young man..breastes down..and dont spill the juice which collects in the concave part...which means no flipping. Going that far believe I would have gone ahead and split it into two parts. That spatchcoking stuff just sounds nasty for some reason..lol

Looks great Case. That's the way I spatch my birds. I don't really smash them flat.
 
I still think that chicken or turkey is the best smoke, bar none.

Pretty color on the bird. Swap ya some etouffee for a thigh! AND throw in some cole slaw! If you'll wait 5 hours I even make ya some hot bread.
