It is time to double smoke a 10# spiral sliced ham. ( this is a fully cooked ham). I had to pre heat the MES 40 in order to cold smoke. It is 24° here. So I turned the MES on for 3 minutes. Got a full AMNPS fired up using 2 parts hickory to 1 part apple pellets. I am going to let it smoke as long as the AMNPS goes.

Here is the ham as soon as it goes into the smoke.

Well after 1 and 2/3 AMNPS I looked at the ham this morning. I'm wanting more color. So I loaded the AMNPS with oak pellets. It will be a milder smoke. I hope it gets deeper into the ham. Maybe I need to get in a 12 step program. I think I am a smoke hound!

Does double smoking a ham dry it out?
 
Cold smoking it, which is what i believe he did, should not dry it out, but hot smoking would more then likely make it a bit dry.
David can tell you too, but in the mean time:

No, Cold smoking won't dry a Ham out, and neither will Hot smoking. See Below:
