What to do... :) (leftovers)

Hey guys i'm going to try this recipe this weekend:
http://www.smokingmeatforums.com/t/53052/dutchs-smoked-shredded-beef-enchiladas on my electric smoker.

The only change i'm going to make is to smoke the dry enchilada mix :)

Since i will be smoking already i'm going to go ahead and smoke an entire 5-6 pound chuck roast but since its only me and my wife we won't use nearly that much. I'm trying to decide what to do with the leftover meat. Only thing i could think of is maybe chili. Any bright ideas on what to do with with the leftover beef?

Ncage-you're going to love those enchaladas. Post up some q-view when you make them.

It's only me and Ma at the house now and we do what you are planning-smoke a large roast and use the left overs for the enchaladas. Don't know how they manage, but when we pull those enchaladas out of the oven, my youngest son (21) and the oldest grandson (18) show up on the front door and Ma feeds them. I tell Ma Dutch that we ought to move out of state so we can enjoy a quiet meal without company dropping by. . .

Dutch i think your going to have another over when you make them now :P. Sorry for my ignorance but what is "q-view"?

Oh leftovers, we make a lot of left overs! You could use the meat for a shepherds pie, topper for baked taters, stuffed cabbage, stuffed peppers. Chop it up and make hash and eggs, use it to make empanadas. Use it instead of burger in lasagna or manicotti. Sloppy joe sandwiches.

It will freeze up good to, especially if you have a vac packer. Portion out one or two servings and freeze.

The rice recipe i used is here: http://www.thekitchn.com/recipe-mexican-rice-recipes-from-the-kitchn-198867  was pretty dang good. Pretty similar to the standard rice recipe i always use. 

The echiladas tasted just how they looked (excellent). Smoking the enchilada seasonings was the right choice i think. Just the right amount of smokiness.
