I haven't tried to smoke a steak yet....Any suggestions. I bought some Jack Daniel wood chips that I would like to use but not sure on how long I should smoke them. We like them medium and since I am using a flavor chip, should I put anything besides some salt and pepper on the steaks. Thanks!
 
Hi there! Your food sounds fabulous!

I smoked Bison steaks some weeks back (and I posted in the game meat section) and they were terrific except I love mine so rare and actually COLD in the middle, and they leaned a bit more toward medium rare, and so smoking probably will yield what you prefer.

What kind of smoker are you using? If it was me I'd do a low temp smoke until they hit an IT of 140* then sear them off on the grill to get you to your medium doneness. I usually prefer to keep my steaks simple and use salt, pepper, and garlic.
 
It is an electric smoker. I might just end up putting on grill. Supposed to be in the 40's today so I guess I can cook out!!

 Also this is called reverse sear you can look up a lot of them under the beef forums and down to the grilling tab I like this one a lot
