Pop's brine on butts

Pulled out of brine after 30 days. Same recipe as before, with tbls ground clove and 4 oz. honey. Injected this time, not last butt. Thought maybe would get more clove and honey, but nothing overpowering at all. Double up next time. Did this before eating up on first recipe. One on bottom just did to temp (145) for Thanksgiving, and the bigger one on top to be pulled.


First one here pulled for Thanksgiving, to be froze.


Sorry no pics on initial take out of oven, next story. Pulled out of oven at 1:15am Sunday started all at 10 am Saturday. Foiled and toweld and pulled at 6pm. Made 1 cup apple juice, 1/4 cup Dr Pepper, 1/4 cup brown sugar, tsp chipolte powder, home made of course and tbls worchestersire and covered in oven for 1 hr stirring in between. Was great. Needed more brown sugar I think to make it alittle more sticky. This is fun. Oh used mainly apple. Put smoker in storm shed so windy. Sat on edge of field watching for deer. Greeeeat!
 
Looks terrific! You have to love that cured pork and yours looks terrific. 

As for deer. Come here to the Canadian Rockies. I had to fence my property because they were eating everything. Even after fencing everything, we see them in groups just outside our fence. Unfortunately, we are in a hunting restricted zone.

It is pulled ham and it is the best. Took it to work and they all loved it. just eating it on its own with no condiments at all, have to just stop eating. Pulled is better in my opinion because fat renders out and you can toss what is left out. Disco, sorry about zones up there. Here in Mo. can get a landowner tag on bow and rifle on 5 acres or more for free, and hunt wherever on paid tags. Good luck.
 
Oh yea, one guy said how good the bark was and when I told him there was no rub he couldnt believe it. What would we have with a big time brown sugar rub, umm. cant wait next butt going brinin' soon.

I know what you mean about the pulled ham. My buddy is totally addicted to it but is too lazy to make it. He has offered many favours for me to make it for him.

As for the deer, it isn't that it is private land. My property butts on recreational trails and ski trails and due to that use, they don't allow hunting. I would be happy to just club them, they get that close. However, the local game people suggest that might not be allowed.

I don't know Foamheart. My hunter friends come to my place and see the deer standing around outside my fence and swear they come here because they know they can't be shot.
