I've been wanting to cook a brisket all summer long then on my birthday my brother gave me a 50lb bag of Hickory Charwood and then it was on. My wife picked up a small brisket on Friday and I rubbed it and coated it with mustard and wrapped it up then broke it out yesterday, fired up the smoke and this is the end result! It was very tasty and tender!


 
Looks great. Thought I smelled brisket in those westerly winds. Mmmmm. Haven't tried a bisket yet so you're my new hero. Brisket is definitely my next adventure in smoking. :bravo:
 
 
Great looking brisket. Very nice smoke ring.What IT did you take it to?
I took it to 197 then pulled it out, I already had it double wrapped in foil at 160 and then wrapped it in two towels and let it rest for an hour. Wanted to let it go for two but the wife was hungry so we ate it a little early but it was so good!
