Hello Smoking Meat Forum from the foothills of the California Motherlode!

Name here is Dave.  

Several months ago my good friend in Southern Missouri got me interested in smoking meat and this site which he routinely shares his Smokin Adventures with.  Well, it took a while to come aboard being a complete novice at smoking meat on purpose! Any meat I had smoked in the past was purely due to inattention to detail or more bluntly stated as  “yes Dear I burned it (again)”.

I am here to tell y’all that smoking meat on purpose is somewhat addictive to not only me but to my family too.

I plan to share my successful meat smoking adventures as well as the not so successful ones (which are actually minor successes in that ya know what doesn’t work) and some of my seemingly nonstandard or unusual ways of doing things. Oh, and not to worry, nothing I do is either illegal or immoral well that is unless your moonlighting here as one of those “self-appointed” culinary cops!

  Glad to see you finally took the plunge and joined the great group here!

I wish we lived closer so I could grab a few bites of the goodies you been smoking with that Manzanita wood!  If I had a gas or electric smoker, I would be buggin' you for some of that wonderful wood!  Not a good option for me though as my old stick burner would eat a large priority mail box of it in nothing flat

I live a few miles from Rib Mountain. That is the hill that did my knee in when I was young and showing off for my wife a along long time ago. My youngest daughter has worked there for the last few years as a lift operator. Do you get this way very often?

Born & raised in the Racine area (flew my plane cross country into KRAC in '06) and last time in the Wausau area was on business in January 2009. Oh, just received an order of Franks Quality Kraut to serve with my smoked spare ribs sometime soon.
