Just got my mes 40 yesterday. I am currently curing the smoker using the maverick 732 therm. My question is how dependable are the mavericks? Per directions I am curing at 275. The Maverick is saying it is 290 and the built in meat therm in the mes is saying 289 but the box temp is saying 240. I would think with 2 therms showing the same temp that the mav is right on and the therm in the mes is off, but 40 deg?

The mes controller is notoriously inaccurate.  If you verified the mav's accuracy with boiling water or an ice bath, trust the mav.
 
Use the maverick to moniter the temps and adjust the controler based on the maverick reading and you will have some good Q. I have 2 (MES30 & MES40) and have had great food from them but I have added an auber PID to the MES40.

In simple terms a pid is a much more accurate temp controller, bypassing the mes temp controller.  A pid "learns" your cooking setup which allows for temp swings as low as +- 2 deg F from your set point.  I have a pid on my mes 30, here is the thread if you are interested,

 however i now have a different model from auber as i found the new model more accurate and repeatable.
