So, I'm a bit new to smoking and I had been using some lump coal from the local grocery store here (Kroger) thinking it was a good grade. All of this time I have had trouble keeping the temps above 200 was due to the lump coal. I bought some Stubbs coal and just one chimney full kept it above 225 for 2 hours. That was without adding any more coal. I feel like an idiot because I have screwed up 2 racks of ribs in the past two weeks and the whole time I was babysitting the smoker, adding more lump, and using a blower to add oxygen for heat. Gahhhhhhhhhhhhhhhhhh!!!!!!!!!!!
 
Sorry to hear that but don't feel like an idiot - everyone has to start somewhere & now you know you can keep temps with good lump

Aren't ya glad you have something at least to blame it on..........

Smoking is about gaining experience and having a good time doing it.

Don't ever get frustrated, you can always adjust in another direction, its just part of the fun.

Glad ya found your problem, have fun and remember to just enjoy the smoke.
