Pecan Smoked Brisket on Mini WSM

I got started late yesterday smoking a Brisket Flat on the Mini WSM and as a result it wasn't finished until midnight.  I made a quick unloaded sandwich for sampling before going to bed.  It will be good today with the Brisket Drippings (Au Jus) and with all the condiments.

My injection and mopping sauce:  Put stick of butter into sauce pan, some Worcestershire Sauce, Garlic clove, Onion Powder, 1 cup low sodium Beef Broth, 1 cup Apple juice.  I also added a TBS of Lemon Juice and about 1/8 tsp of Cinnamon (that combination really enhances the real flavor of the beef).

The Rub is basically Jeff's Rub.  To that I added about 1/2 cup of ground Roasted Pecan.

Hello Danny.  You're a long way from Texas.  I just viewed your post on British Brisket - it appears that the Brit's know how to ruin a Brisket.  Thanks for the comments!
 
LOL!!!  Yep, being a Texan, was a BIG!!! shock when I saw what passed for brisket here in England.  Since you read the post you can imagine the difficulty smoking that extra lean piece of meat.  I now know how to get a brisket that is cookable ( if that is a word) It ain't "packer" but comes out really good..  Keep Smokin!

Looks Great, you sure are getting some good smokes going with your Mini! I have been using a bunch of pecan and pecan/cherry mixed this summer and really like the flavor profiles I have been getting. I bought a bunch of pecan at the end of last summer in the mark down bin and glad I did. No one here has had any. Going to have to order some this winter.

I've been thinking about trying that combo of pecan/cherry.  My grandson and I built two mini wsm's - I wanted the mini because we have been away from home & my WSM 22.5 Bullet.  The mini exceeded my every expectation.  Thanks for the comment.
 
I agree with Case Ray... you are slinging some great food from the mini...that flat just barely fit in her! Hehe... keep it up!

OH MY.. I didnt realize the video until after my last reply.. for one. . great sound track.. I love the sound of the guitar. ... two.... great coloring and excellent smoke ring... now I wanna do a flat on my mini!
 
 
Hello.  Sorry to keep butt'n in.  That pecan cherry mix is the the real deal.  AWESOME!  You will not be disappointed.  Just my opinion.  Keep Smokin!

Thanks for the comments and great suggestions.  The sky is the limit on things that one can do when smoking, especially to serve something unique.  The mini is my go to for smaller smokes, but I do a lot of smoking for our church - the last smoke was 60 lbs of brisket on the WSM 22.5" bullet.  Keep on smokin!

I believe I could have finished in 9-10 hrs. at 225, taking the meat to 180 and then wrapping and placing in an insulated ice chest.  However, I messed up and used a mix of left over charcoal and a new batch of Stubb's.  The old charcoal stopped my air vents.  I had to clean out the old ash and replenish and restart.  That's why it was midnight before I finished.
