I've smoked 2 times with my new MES 30". 1st time was a Pork Loin that turned out awesome, 2nd was a epic fail at a Fatty that ended up turning into more of a meatloaf/casserole. Tomorrow, I'm off to bigger and better things.....Baby Back Ribs!! I'm using a rub recipe that Mythmaster posted awhile back

The candidate....about 3.5lbs



With it's 1st bath of rub/brown sugar...


All finished up, ready to be wrapped in plastic wrap and into the fridge overnight...


Plenty of Qview to follow tomorrow folks, stay tuned!
 
It is too darn bad that you did not marinade these ribs before putting the rub on.

Sorry for the late update folks. And C Farmer, my MES is a Gen 1. 

OMFG....my 1st attempt at baby backs ROCKED!! I left them in the smoker for about 5 hours straight, no foil, no spraying, etc. Cooked around 225 to 235. Good crust, awesome taste, slight tug from the bone just the way I like them!!

Right, but I read somewhere on here that it was best that it should be above the intake level. AKA the chip dumper, so I tried it that way. The AMPNS only burned one row in a 5 hour period, it was basically out by the time I pulled the ribs out of the smoker. But I checked off & on, must have went out the last hour. I had the chip tray pulled out about 2 inches and the chip dumper out completely
 
What ever works, right?

Mine works good on the rods.
