Hi All,

I just got Jeff's newsletter, read the bacon wrapped shrimp with great interest, but I have a question for ya'll.

25-35 minutes at 225 doesn't get me crispy bacon :-(

I just made a batch of ABT's the 1/2 slice of thin Oscar Meyer (don't say it) was still chewy and earned me a complaint from She Who Must Be Obeyed :-(((((

Do you folks pre-cook bacon or am I missing some deep dark secret? 

Any thoughts?

I have a question about the newsletter, too.  What does "grate level" mean
It refers to tracking the temp at the area where your food is - here are a couple pics showing thermometers measuring temp at grate level

Even pre-cooked, the bacon will not be crisp like in breakfast bacon strips.  It's just the nature of bacon and the temps for smoking.  It will be done and will add that wonderful bacon flavor to the shrimp which is the goal.  Just don't expect crispy bacon.
