Took some bottom round out Friday and sliced about 1/8" for some jerky. Mixed it with HiMountain original seasoning and cure, some Hi-Country seasoning, and alittle W sauce. Took it out this morning cut it into strips put it in my Cajun Injector electric smoker. I have the AMAZN filled with one row of Hickory Apple and Winebarrel mix. My little mod I did to smoker sure helps with air flow. I took a computer fan I had wired a 12v charger to it mounted to intake on smoker. I also drilled holes in the pellet shoot inside my smoker. Will post some pics later today.
 
Let us know how it comes out. I've got to try some jerky. I have some cure #1 on order, and a couple of recipes I want to try.

Gonna try beef from the store first to get some experience before some elk comes my way in a few months!

You’re lucky you live in area where the Elk just kind’a wander by.  I have traveled US 30 and seen the elk migrate through that area.  Here in Southern Ontario Canada, it is near impossible to find an Elk.
