Jennifer won a box of fruits and veggies from Grow Alabama and it came to the house yesterday.


Here is the bounty of the box spread out in my tiny kitchen.

Some of the stuff was gifted to one of our neighbors...they like eggplant...we don't.

The grapes went with her to work today and the kids will eat them for snack.


We made pickles again. 2 quart jars full.


We canned a basket of peaches....the color is gorgeous!


Used apple juice as the liquid and some fruit fresh acid too.


Here is some of the juice that was left over. She drank a glass of it and said some vodka would be great in this...or some 'shine!


We also froze the corn....I cut it off the cobs since she wanted whole kernel...taught her how to do that.

Also...there was a little bit of okra...so I taught her how to cut it...froze it on a cookie sheet and then vac sealed that too.

She is going to take a bunch of the stuff we have been working on this summer to College in a few weeks.  She wont be a "starving college kiddo"!

Sure could!  She is learning that there are not the nasty chemicals and icky stuff in the foods.  Its a lot of work...but fun too.  We had a blast last night.

Hey Kathryn If you have a pressure canner here is a great recipe for grapes. Ive also used mixed fruit and cherries.

This is probably the easiest recipe you will find for making home canned grape juice. I LOVE how simple it is. No cooking, no squeezing, no juicing; how great is that? And the flavor is outstanding. Do give it a try!

Grape Juice (Quarts)
Ingredients per quart jar:
1/3 c. sugar
1 1/3 c. grapes (I like Scuppernongs)
boiling water

Wash the grapes well. Using a funnel and ladle, pour sugar and whole grapes into hot jars. Fill jars with boiling water to 1/2 in. headspace, then cover with lids and rings. Pressure can jars for 10 min. at 5 lbs. Allow to cool overnight before testing the seals on the lids. If any didn’t seal, refrigerate immediately.
 
Mike....I have both pressure and water.  Thanks...that does sound great!

Foam....yup....I checked it with the University of Georgia Canning site to see if Water Bath or Pressure Canner...could do either one...so I water bathed. We do have some Captain at home.

Kat, afternoon......    Apple juice ??  what kind....  The stuff in the store that is "clear"....or real squeezed type fresh juice, "cloudy with pulp"...   maybe it don't matter.....  I'm thinking Tre-Top type juice...     Dave

Piney...would love to come down...if only I could go to the beach for at least a day!

DaveO....100% Apple Juice...not a cider.  And...the info said...a "syrup", grape juice or apple juice.  Since the "baby chile" is allergic to grapes...we opted for apple.
