Got the newly acquired New Braunfels out of the back of the truck this morning after the rain and cleaned her up inside as good as I could.  I decided to light a fire in her just to see how she performs as is before any mods are done.  I knew there were a lot of loose fitting parts, but holy moly she smokes everywhere!   Have some lump in her with a few small sticks of oak just to experiment.  Only thing I did was roll up some flashing and stick in the chimney

As I get time I will convert her to a RF and probably drop the FB so she can breath better.  'Course she will get sanded down and a good coat of high temp black to make her look presentable

It isn't a wasted day as I have a slab of baby backs in the 'lil ECB two door square smoker

A friend sent me a 4 pack of the famous Rendezvous rub and boy does that stuff smell goooood!!!  Sure wish I could get close to duplicating it

She is rock steady at 230° + or -  a few degrees with the dampers closed.  The probe is on the rack midway in the CC and of course the thermometer in the lid is up high, so will be a bit hotter.  Overall I'm quite impressed as she is with no mods.

Fuel consumption isn't bad and don't take much in the FB to keep her chugging along and making that beautiful TBS

If doing a RF mod makes her even better I will be in 7th heaven

That is high on the priority list.  The FB door has a gap all the way around it, so it draws a good bit with the damper completely closed.  Not so much that she gets too hot though.  I will get some stove rope or something to put around the CC door and seal that up a lot better.

This stuff could get addicting

Ok, Ok!  IS addicting

Already thinking ahead to figure out what is wrong with the neighbors cheapie horizontal SFB causing it to not get up to temp.  I could have conned him out of it dirt cheap, but wanted an older, thicker job like this one and was about ready to just build one.  Might have to build one anyway just for the helluvit

Already pulled the ribs from the ECB, foiled 'em and put 'em on the big girl just 'cause she's so steady at the right temp

I'm jealous! I've been looking for a NBBD for some time now, just not many in this neck of the woods (Omaha).

Thanks.  I just looked on the Omaha Craig's list and see a very nice looking vertical New Braunfels for $200 in Morningside.

Try some mis spellings of NB in your searches as a lot of folks can't spell very well.  Also do a generic search for "smoker" and on the upper right of the page under "sort by"  choose low price.  That way it will eliminate 5,000 automobiles, or at least put them way down in the results

I like craigs list. But Ebay is my drug of choice.....Try "fatfingers" on ebay
Tried searching by sellers under that name and a general search as well.  Only found a bunch of CD's by El Dorado Jazz Band and guitar accessories, but nothing related to smoking

Started them on the ECBS, but when I put them in foil they went on the new smoker as it was holding temp so well.  Uncovered them and finished for about an hour, then poured some of the apple juice and drippings in the foil over them.  Man were they good!  Used the Rendezvous rub my friend sent me and it was a bit on the spicy side and no sweet on the ribs.  Might have to reserve it for Brisket
