Fwiw.. I find younger all natural birds are juicier and tastier, I'd rather do two 6 lb then one 12lb.Tyson all natural in my area has been my go 2. Say NO to brine... Jmo
 
Oh one last thing I forgot... This ain't no MES, put that bird right on the rack with nothing underneath.. Drippings straight down to the fire. NO peaking at it either, each time you open that lid it messes with the temps for about 10 minutes

I have to look once in awhile.
 
I shook my basket down to get the ash out, I am going to use the half burnt and unburnt charcoal in there for the next smoke.
