Did some pork steaks on my Weber performer. Indirect for about 1 hour 30 min. Smoked it with 2 chunks of plum wood and I chunk of orange wood. Plated with corn and homemade potatoe salad.

I did pork sirloins last night and wish mine looked that good. Sadly mine were just too tuff, the neighbor's dog appreciated them though. WHY do they cut pork so dang thin these days?

Anyway, nice looking chops man. Never tried plum wood and had always here that citrus was a Bozo no-no. Learn something new everyday and you'll never get old, so I guess I got a press pass today.

They cut the steaks here at 1/4 to 1/2 inch. I had to tell the butcher to get me a Boston butt and cut them at 1 1/4 inch.
