I've lived in the northeast all my life and have never found TriTip in the grocery store. This week, that changed! The price nearly made my choke, but I had to buy it.


The meat was very lean. All I did for seasoning was a simple salt & pepper.


Went on the smoker at 225. I used post oak and cherry for the smoke, which is my favorite combo for beef.


Pulled it with then IT got to 115 degrees. Then It went on high heat to get a reverse sear. The sear was about 2 1/2 minutes per site. There were no flare-ups with it being so lean.


I couldn't believe how flavorful this was! Now I definitely see what all the fuss is about. I was careful to slice this against the grain.


One more money shot. 


I really hope the store will continue to carry this cut. (but at a cheaper price!) Thanks for looking!!

These are my new favorites to smoke. That is a pretty high price but it's worth it. The local grocery store here has USDA Select grade at $4.99lb. Costco had USDA Choice grade for $7.99lb with 2 in each pack @ 2.5lbs to 3lbs each. Got three tri tips this weekend to smoke tomorrow. Got them sitting in some java rub right now.

I am going to do a reverse sear on mine tomorrow as well. I didn't the first time I made them and they still tasted fantastic.

Interesting! I can see $7.99/lb, that is similar price to Porterhouse. But I'm with you, it was worth it and this is definitely one of my new favorites Good luck with yours!

I try not up buy and meat at that store. I have been getting a lot better deals at small local meat markets. You should try to find one in your area. I can't stand giving Danny that kind of cash for meat.

I hear you! Unfortunately Weggie's seems to be the only place around here that carries Tri Tip. When I ask about it at the farmer's market they say "sorry we don't do that cut". Hopefully now that it's more well known that will change. (thank you Food Network)

The only way I can think of would be to order a 1/2 or whole cow from a local farmer, and request that cut from the butcher. Unfortunately I don't have a $1,000+ to drop on that right now. I'll keep looking for sure!
 
I just googled meat markets in Ithaca NY. It looks like you have a couple in your area. One is all pasture raised, probably some tasty stuff.
 
Great Looking Tri!!! It's too bad they trimmed all the fat off! I buy tri's by the bulk, untrimmed, $3.25 lb on sale!
Thanks Dirtsailor! OMG $3.25/lb....I'm insanely jealous!! I was under the impression that this is a naturally lean piece of beef, but it sounds like that's not the case. Now I really need to find another source! The thing that really blew me away with the Tri was the rich, beefy flavor it had. Even with it being so lean.

Thanks David, I'm definitely on the hunt. The only real meat market I know of is The Piggery and their specialty is pork. The other meats they carry are from other farms in the area. It's all really good stuff, but you never know what they'll have from day to day.

I have since started trimming the cap of prior to cooking so I can get more seasoning on the meat. Sometimes I put the cap back on. Other times I put it in a foil pan below the tri- and render it for drippings to make au jus. Tri tip makes awesome french dip sandwees!

Thanks for posting those, that is very helpful. They look awesome, and I bet the au jus is incredible! I'm going to have to try that for sure.
