howdy yall! heres a brisket smoke ive been keeping stored in my phone for quite some time now, since i havent been able to post with pics lately cuz of dumb government filters or whatevs...lol here we go..this was a good one, no a great one...
My daughter made me put her brisket in the seat with her and she buckled it up..haha. krazy kid!
Looked alot smaller in the bag, but sure enough 14.25lbs came outta there..
all rubbed down and awaiting her smoky demise.
AT AROUND THE 4 HR MARK, WOOD CHANGE TIME AND LAST PIC FOR AWHILE....
AT AROUND THE 11HR MARK I DECIDE ITS PROBE TIME....BECAUSE THE FORK I JUST RAN THRU FELT REALLY GOOD, SO I KNOW IM CLOSE, PLUS IT SMELLS AWESOME. AND WHAT DO U KNOW..???...IM RIGHT AT 202* PULL THE PROBE AND TURN OFF THE HEAT, LET IT REST IN THE WARM CHAMBER AND WHATEVER SMOKE IS STILL COMING OFF THE WOOD DO ITS THING...

SHE SLICED UP OK(MAYBE IM NOT A GOOD SLICER..LOL.)...IVE NEVER MADE BRISKET TO THE POINT OF CHOPPING(AND THATS WHAT THIS WAS) THE END TEMP WAS 206*IT. EXTREMELY FORK TENDER. MADE CHOPPED BRISKET SANDWICHES WITH IT ALSO PUT IT IN THE FRIDGE FOR IT TO SET, AND SLICED IN BIG THICK SLICES AND TOOK A FEW AS GIFTS FOR PPL AT WORK, WRAPPED IN BUTCHER PAPER AND REHEATED AT WORK, THEY THOUGHT I JUST PULLED IT OFF THE SMOKER, THATS HOW TENDER THAT WAS STILL. THE PICTURE DOESNT REALLY DO IT JUSTICE AS FAR AS MOISTURE, BUT ILL TELL YA THIS, I HAVE NEVER IN ALL MY YEARS IN OKLAHOMA CITY, PAYING FOR BBQ AT SHACKS AND COMMERCIAL RESTYS, HAVE I EVER HAD A BRISKET SANDWICH LIKE THE ONE I MADE HERE. AMAZING!
