Hi, my name is John and I am new to smoking. My friend gave me some ribs he smoked 3 weeks ago and I'm hooked. Went to Lowes and bought the Master forge 50 in propane smoker last week. I already cooked up some ribs (twice) and today a pork butt. I'm using store bought rubs for now, the ribs were so tender, and as I write Im waiting for the pork to be done. This site is great, I learned so much the past few days, but I have so many questions. My first is how do I keep smoke going, it seems like after 2 hours it stops smoking, do I keep adding wood? I been using applewood that I soak. I mix small chunks and shavings. The smoker has a metal pan with a cover with holes in it. I been adding, but it seems like I go through alot. Thanks. Yea you gotta keep adding chips as they burn out. Chunks will last longer. When you get tired of adding chips all the time you can look into an A-Maze-N Tube smoker, it burns wood pellets and can provide 4-6 hours of perfect smoke without touching anything.

Welcome to the forums, John!  Glad you've joined us.  You've found a great place to learn and share ideas on our favorite pastimes...grilling, smoking, and curing great food!  There are lots of friendly and knowledgeable folks here who really enjoy helping one another.  Just ask any time you need help and you'll get plenty!

With wood chips, it is necessary to reload about every 30-45 minutes for as long as you want smoke.  You can decrease how often you need to reload by using larger chunks of wood...they won't burn up as fast as chips and shavings.  And I don't find any benefit in soaking wood chips or chunks...the water must evaporate before the wood will begin to smoke.  Best advice for smoke production is to purchase a smoke generator from A-Maze-N Products (sponsor's link at the bottom of the page).  With an AMNTS smoke generator, you can produce hours of perfect smoke without reloading.
