Just over a week ago I picked up a MES 30 and an AMNPS.  While researching smokers, I had found this site.  It helped immensely and I quickly settled on the MES 30 and the AMNPS due to ease of use, while still getting results.  I smoked a pork butt this past weekend and it turned out pretty well!  Had my best friend over for dinner and everyone approved.  Ate like a king all week on the leftovers!

I managed to snag an amazing sale on spares today at the store.  $1.39/lb!!!  I'm planning on smoking a rack of spares and baby backs tomorrow and I could use some guidance.  I keep seeing references to the 3-2-1 method, but I haven't found a post on it yet.  I have seen the "basic" posts on Boston Butts and brisket, but I can't find anything similar for ribs.  A nudge in the right direction would be appreciated!

I have only been poking around here for a little over a week, but I must say that this is an amazing forum!  Friendly people always willing to help.  Of course, beer and BBQ will make people happy!  Speaking of beer, my first home brew batch will be ready in a couple weeks!

it is every where...and welcome to the site....a lot of great expert smokers on here...don't be afraid to ask question or post what you have made...don't for get to include q-view (pictures)...other wise you might get a bit of hard time from the members
