This sauce is great guys. I’ve been using it for a couple years now. It is wonderful over pasta, or added to whatever you think it would add to. It’s also very delicious added to sausage, I have only added it by eyeball until it looks and feels right but the addition is very good.

Recipe:

Italian Red Pepper Sauce.

4-5 red bell peppers (roasted and peeled)
2-3 Fresno peppers (roasted and peeled) (Calabrian peppers preferably)
1 head of garlic (roasted)
2Tbs olive oil
1/2 of a medium onion
2Tbs butter
1C chicken broth (I make mine from Knorr bouillon)
1/2C heavy cream
1/2C grated parm
Red pepper flake by eyeball
2Tbs fresh minced basil
about 4-5g fresh ground fennel

Saute onion in oil, then add peeled peppers and garlic to combine. Then into the blender until smooth. Melt butter in same skillet pour peppers back into pan, add broth, cream, salt and pepper to taste. Simmer 10 minutes. Remove from heat then add grated Parmesan.

Use this over pasta or add to ground pork for sausage.

Enjoy.
